chole recipe


Ingredients : 

  • Chickpeas(chole) : 1kg
  • Ginger Garlic paste : 2 tablespoon
  • Green coriander
  • Amchur : 1/2 tablespoon
  • Salt to taste
  • Turmeric : 1 teaspoon
  • Tomato : 2
  • Onion : 3 
  • Green chilli
  • Mustard oil : 4-5 tablespoon
  • Cumin seeds : 1 teaspoon
  • Coriander powder : 1/2 teaspoon
  • Red chilli powder : 1/2 teaspoon
  • Cloves
  • Asafoetida
  • Cinnamon
  • Bay leaves
Method : 
  • Soak chole overnight
  • Pour chole and water in pressure cooker, add 1 tablespoon salt and cook for 6 whistles
  • Make paste of onion and tomato
  • Put kadhai on gas stove
  • Add 4-5 tablespoon mustard oil and let it warm
  • Add 1 teaspoon cumin seeds, ginger garlic paste and fry it
  • Add green chilli, onion and tomato paste, and turn the flame to medium and fry it
  • Turn gas to low and add cloves, asafoetida, cinnamon, bay leaves and fry it
  • Add 1 teaspoon turmeric, 1 teaspoon salt, 1/2 tablespoon amchur, 2 teaspoon coriander powder, 1/2 teaspoon red chilli powder, 1/2 teaspoon cumin seed powder, mix well and turn the gas to full
  • Turn the gas to low and cover the lid and cook for 2-4 min
  • Masala is ready, add chole
  • Cover the lid and cook for 10-15 min on low flame
  • Chole is ready, add green coriander to garnish
