Ingredients :

  • Poha(chivda/flattened rice) : 2 cup
  • Roasted peanuts(moong phali) : 1 medium cup
  • Curry leaves
  • Refined oil : 2 tablespoon
  • Green peas(hari mattar) :  1 cup
  • Carrot(gajar) : 2 finely chopped
  • Onion(pyaj) : 1 finely chopped
  • Green coriander  to garnish
  • Grated ginger garlic : 1 teaspoon
  • Green chilli : 2 finely chopped
  • Mustard seeds(sarso dana) : 1 teaspoon
  • Coriander powder : 1 teaspoon
  • Red chilli powder : 1/2 teaspoon
  • Cumin seeds : 1 teaspoon
  • Turmeric powder : 1 teaspoon
  • Salt to taste
  • Capsicum : 2 finely chopped
  • Tomato : 1 finely chopped
Method:
  • First wash poha in water, 2-3 times 
  • Put kadhai on gas stove on full flame and let it warm
  • Add 2 tablespoon refined oil and warm it
  • Add 1 teaspoon cumin seeds, 1 teaspoon mustard seeds fry it
  • Add ginger garlic and green chilli
  • Add curry leaves
  • Add onion and fry it
  • Add tomato and fry till it becomes soft
  • Add carrot, green peas, capsicum and mix well
  • Cover the lid and cook for 10 min on low flame to make vegetable soft
  • Add 1 teaspoon turmeric powder 1 teaspoon coriander powder, 1/2 teaspoon red chilli powder, salt to taste and mix well
  • Add poha and mix well
  • Add peanuts and garnish with green coriander
  • Vegetable poha is ready
