Ingredients :
- Poha(chivda/flattened rice) : 2 cup
 - Roasted peanuts(moong phali) : 1 medium cup
 - Curry leaves
 - Refined oil : 2 tablespoon
 - Green peas(hari mattar) : 1 cup
 - Carrot(gajar) : 2 finely chopped
 - Onion(pyaj) : 1 finely chopped
 - Green coriander to garnish
 - Grated ginger garlic : 1 teaspoon
 - Green chilli : 2 finely chopped
 - Mustard seeds(sarso dana) : 1 teaspoon
 - Coriander powder : 1 teaspoon
 - Red chilli powder : 1/2 teaspoon
 - Cumin seeds : 1 teaspoon
 - Turmeric powder : 1 teaspoon
 - Salt to taste
 - Capsicum : 2 finely chopped
 - Tomato : 1 finely chopped
 
- First wash poha in water, 2-3 times
 - Put kadhai on gas stove on full flame and let it warm
 - Add 2 tablespoon refined oil and warm it
 - Add 1 teaspoon cumin seeds, 1 teaspoon mustard seeds fry it
 - Add ginger garlic and green chilli
 - Add curry leaves
 - Add onion and fry it
 - Add tomato and fry till it becomes soft
 - Add carrot, green peas, capsicum and mix well
 - Cover the lid and cook for 10 min on low flame to make vegetable soft
 - Add 1 teaspoon turmeric powder 1 teaspoon coriander powder, 1/2 teaspoon red chilli powder, salt to taste and mix well
 - Add poha and mix well
 - Add peanuts and garnish with green coriander
 - Vegetable poha is ready
