Mutton kaleji recipe | Kaleji masala recipe in hindi
Ingredients:
- Mutton kaleji(liver): 500gm
- Cumin seeds: 1 teaspoon
- Red chilli powder: ½ teaspoon
- Turmeric powder: ½ teaspoon
- Coriander powder: 1 teaspoon
- Salt to taste
- Garam masala powder: ½ teaspoon
- Green coriander: finely chopped
- Mustard oil: 3 tablespoon
- Onion(paste): 2
- Tomato(paste): 2
- Grated ginger garlic: 2 teaspoon
- Green chilli: 2 finely chopped
- Cloves: 4
- Black cardamom: 1
- Cinnamon: 1 piece
- Bay leaves: 1
- Green cardamom: 2
- Black pepper: 10-15
- Kasuri methi: 1 teaspoon
Method:
- Put kadhai on gas stove and let it warm
- Add 3 tablespoon mustard oil, let it warm
- Turn the gas to low and add 1 teaspoon cumin seeds
- Add grated ginger garlic and green chilli and fry it
- Turn the gas to full and add onion paste and fry for 2-3 min
- Add tomato paste and fry for 2-3 min
- Turn the gas to low, cover the lid and cook for 2 min
- Turn the gas to full and cook masala to make it dry
- Add all the whole spices and fry
- Turn the gas to low, add ½teaspoon turmeric powder, ½teaspoon garam masala, ½teaspoon red chilli power, 1 teaspoon coriander powder, salt to taste and mix well
- Turn the gas to full and fry masala
- Add 1 teaspoon crushed kasuri methi and mix well
- Cover the lid and cook masala for 2-4 min on low flame
- Masala is ready now add mutton kaleji(liver) and mix it well
- Cover the lid and cook for 10-15 min on low flame and stir it in between
- Mutton kaleji is ready, add green coriander to garnish
